The Buyer | How the appliance of science adds freshness to DAOU wines

It is the scientific background of founding brothers Daniel and Georges Daou that has leant such precision to the winemaking at Californian winery DAOU. So explained head winemaker José Alberto Santos at an intimate dinner in London’s Soho district where seven wines were shown with an emphasis on Bordeaux-style Cabernet Sauvignon. Despite the location being in Paso Robles, DAOU wines benefit from ‘European’ soils and high altitude lending a freshness to their core. Connie Hunter reports.
